Sounds like you just haven’t had actually good coffee. Have you gone to a nice cafe and tried a latte or something? I tolerate your standard drip coffee if I really need caffeine, but my default is to make a latte in a stove-top Moka pot or buy a latte from a cafe. I’m very sensitive to bitter tastes. I’m one of those “supertasters” with the cilantro-tastes-like-soap gene and everything. I used to think I’d never like coffee but it’s all about finding what works for you. Also, I don’t usually drink it for caffeine. I often drink decaf. I just like the taste and the routine in my morning. The warmth is cozy.
I’ve felt this way for most of my life, and I still do to some extent (but hey, as you said, the beans smell great). I think I just dislike hot drinks in general, although I do agree that the bitter flavor of coffee is even more unpalatable when it’s hot (not that iced coffee’s any better). However, I’ve recently discovered that nitro cold brews aren’t too bad. I think what appeals to me about them is that they’re cold and frothy without being iced, so it’s almost like drinking beer.
